  • ½ cup shredded apple (about 1 small apple)
  • ¼ cup shredded carrot (about 1 small carrot)
  • ¾ cup milk
  • ¼ cup melted unsalted butter (slightly cooled)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup whole wheat flour
  • ½ cup rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ⅛ teaspoon salt

Instructions

  1. Preheat the oven to 375°F and grease a mini muffin pan.
  2. In a medium bowl, mix mashed bananas, shredded apple, shredded carrot, milk, melted butter, egg, and vanilla until well combined.
  3. Add whole wheat flour, rolled oats, cinnamon, baking powder, baking soda, and salt. Stir gently until just combined; avoid overmixing.
  4. Fill each mini muffin cup with about 2 tablespoons of batter.
  5. Bake for 16-20 minutes or until a cake tester comes out clean. Cool in the pan for a few minutes before transferring to a wire rack.
