  • 1 cup old-fashioned oats
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup cold butter, cut into small cubes
  • 4 cups peeled, chopped fresh apples
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (for apple filling)
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Cut in cold butter until crumbly. Reserve 1½ cups for topping.
  3. Press remaining mixture into the prepared pan and bake for 10–12 minutes until lightly golden.
  4. Meanwhile, toss chopped apples with cornstarch, lemon juice, vanilla extract, and cinnamon.
  5. Spread apple mixture over crust and sprinkle reserved crumb topping on top.
  6. Bake for another 30–35 minutes until golden brown and bubbly around edges.
  7. Allow cooling completely before slicing into bars.
