  • ½ cup unsalted butter, softened (for filling)
  • 3 cups powdered sugar (for filling)
  • ¼ cup reduced apple cider (for filling)
  • 1 tsp vanilla extract (for filling)
  • Pinch of salt (for filling)
  • ½ cup store-bought caramel sauce (or homemade if you prefer, for filling)
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, cream butter and brown sugar until fluffy. Add egg and vanilla; mix well.
  4. Stir in reduced apple cider and milk until combined.
  5. Gradually add dry ingredients until just mixed.
  6. Drop tablespoon-sized dough onto prepared sheets and bake for 10 minutes or until golden.
  7. Cool on a rack.
  8. For filling, beat together butter and powdered sugar; mix in reduced apple cider, vanilla, salt, and caramel sauce until smooth.
  9. Spread filling between two cookie halves to create sandwiches.
