  • ½ cup unsalted butter (room temperature, for filling)
  • 1 ¼1 ½ cups powdered sugar (for filling)
  • 2 tablespoons plus 2 teaspoons caramel sauce (for filling)
  • 1 pinch of salt (for filling)
  • 4 ½ ounces cream cheese (room temperature, for filling)
  • 3 tablespoons butter (room temperature, for filling)
  • 2 tablespoons brown sugar (light or dark, for filling)
  • 2 cups powdered sugar (for filling)
  • ½ teaspoon vanilla extract (for filling)
  • 1 pinch salt (for filling)

Instructions

  1. Preheat oven to 350°F. Bring apple cider to a boil in a saucepan; simmer until reduced to 1/4 cup. Set aside to cool.
  2. In a bowl, sift together flour, baking powder, baking soda, salt, and spices.
  3. In a large bowl, beat butter and sugars until combined. Add vanilla and eggs; mix in cooled apple cider and apple butter/applesauce. Gradually fold in the dry ingredients.
  4. Scoop dough onto lined baking sheets about three inches apart and bake for 11-13 minutes until cookies spring back when touched.
  5. Cool on racks; brush with melted butter and sprinkle with cinnamon sugar while warm.
  6. Once cooled completely, fill with your choice of creamy frosting.
