  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a loaf pan lined with parchment paper.
  2. In a bowl, mix together flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In a separate bowl, cream together butter and granulated sugar until fluffy. Add eggs one at a time followed by vanilla extract.
  4. Gradually combine dry ingredients with wet ingredients, alternating with buttermilk until just mixed.
  5. Toss diced apples with brown sugar and remaining cinnamon; fold them into the batter.
  6. Pour half the batter into the prepared pan, sprinkle half the apple mixture on top, repeat layering, then gently swirl.
  7. Bake for 55–65 minutes or until a toothpick comes out clean. Cool before slicing.
