  • For the frosting: 8 oz cream cheese (softened), ¼ cup unsalted butter (softened), 3 cups powdered sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine flour, brown sugar, oats, cinnamon, and salt for the streusel; cut in cold butter until crumbly. Refrigerate.
  3. Whisk together flour, baking powder, salt, cinnamon, and nutmeg in another bowl.
  4. Cream softened butter and sugar until fluffy; add eggs one at a time followed by vanilla.
  5. Gradually mix in dry ingredients alternately with milk until just combined.
  6. Fold in diced apples gently.
  7. Fill muffin cups about two-thirds full; sprinkle with streusel topping.
  8. Bake for 22-25 minutes or until a toothpick comes out clean.
  9. Cool before frosting with cream cheese mixture.
