  • 1 can (15 oz) pigeon peas, drained

  • 1 bell pepper, chopped
  • 2 cloves garlic, minced

  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 pound chicken thighs or breast, diced (or substitute with beef)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and bell pepper until softened (about 5 minutes). Stir in minced garlic and cook for an additional minute.
  2. Add diced chicken or beef to the pot; cook until browned on all sides (approximately 7-10 minutes).
  3. Stir in rice until well-coated with oil. Add oregano, cumin, salt, and pepper; mix thoroughly.
  4. Pour in chicken broth and add pigeon peas. Bring to a boil over high heat.
  5. Once boiling, reduce heat to low and cover; simmer for about 20-25 minutes until rice is tender and liquid is absorbed.
  6. Remove from heat and let sit covered for another 5 minutes before fluffing with a fork.
