  • 1 teaspoon paprika
  • 2 tablespoons oil (vegetable or mustard)
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 large tomato, pureed
  • 1 cup beef broth or water
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon white vinegar or lemon juice
  • 1 teaspoon sugar (optional)
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Prepare the spice mix by combining coriander, cumin, turmeric, paprika, and garam masala in a small bowl.
  2. In a deep pan over medium heat, sauté onions in oil until golden brown. Add garlic, ginger, and dried red chilies (if using) for another minute.
  3. Increase heat and sear the beef until browned on all sides.
  4. Add the spice mix to coat the beef and toast for about 30 seconds.

  6. Pour in broth or water, bring to a boil, then reduce heat and simmer covered for 60-75 minutes until beef is tender.
