  • 8 cups vegetable broth

  • 1 cup chopped zucchini
  • 1 cup chopped yellow squash
  • 1 cup green beans, trimmed and cut
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 cup small pasta (like ditalini or elbow macaroni)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened (8–10 minutes).
  2. Stir in garlic, oregano, basil, thyme, and red pepper flakes for an additional minute.
  3. Pour in vegetable broth and add diced tomatoes; bring to a boil.
  4. Add zucchini, yellow squash, green beans, cannellini beans, and kidney beans; reduce heat and simmer for 15 minutes.
  5. Stir in pasta; cook according to package directions (about 8–10 minutes) until al dente.
  6. Season with salt and pepper to taste before serving hot.
