  • 1 large piece orange peel
  • 1 cinnamon stick
  • 5 large egg yolks

  • Additional sugar (for caramelization)

Instructions

  1. Heat the milk in a small heavy-based saucepan over medium heat with lemon and orange peels and the cinnamon stick until simmering. Remove from heat.
  2. In a separate bowl, dissolve cornstarch in a splash of water to create a slurry.
  3. Beat egg yolks and sugar together until pale yellow; add cornstarch slurry and mix well.
  4. Strain the hot milk mixture to remove peels, then slowly whisk into the egg mixture to avoid scrambling.
  5. Return the mixture to low heat, whisking constantly until thickened like pudding.
  6. Pour into ramekins or clay dishes; press plastic wrap onto each custard surface and chill for at least 4 hours or overnight.
