  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage, sliced
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil (for butternut squash)
  • 1 tablespoon olive oil (for pasta dish)
  • 2 tablespoons olive oil (for Brussels sprouts)
  • Salt and pepper to taste (for butternut squash)

  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss butternut squash with olive oil, salt, and pepper; roast for 15-20 minutes until tender.
  3. Combine Brussels sprouts with olive oil, salt, and pepper; roast for 20-30 minutes until crispy.
  4. Cook bow tie pasta in salted boiling water until al dente; drain and reserve some cooking water.
  5. In a large skillet over medium heat, cook sliced smoked sausage until browned; remove from skillet.
  6. Sauté minced garlic in the same skillet until fragrant; add butter and melt.
  7. Add cooked pasta to the skillet along with reserved cooking water; toss with garlic butter sauce.
  8. Mix in roasted vegetables and sausage; season to taste with salt, pepper, and smoked paprika before serving.
