  • ¼ cup tahini
  • 3 tablespoons fresh lemon juice

  • 2 garlic cloves
  • ½ teaspoon sea salt

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each pierced eggplant in aluminum foil and roast on a baking sheet for 50 to 60 minutes until soft.
