Baked Feta Potatoes are the perfect side dish for any occasion, combining the crispy texture of roasted potatoes with the creamy goodness of baked feta. Enhanced by a medley of fresh herbs, garlic, and a splash of lemon, this dish offers a delightful balance of flavors that will leave everyone wanting more.

Ingredients

  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 head of garlic
  • Juice from 1 lemon
  • Honey for drizzling
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the baking potatoes. Par-boil them in water for 6-8 minutes, then drain and let them steam dry.
  3. In a baking dish, combine the par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper.
  4. Wrap the head of garlic in foil and place it in the baking dish.
  5. Roast for 30-40 minutes until golden brown.
  6. Add feta to the center of the dish and squeeze half a lemon over it. Bake for an additional 15 minutes.
  7. After cooling slightly, mash the roasted garlic into the potatoes along with the remaining lemon juice and fresh basil.
  8. Drizzle with honey before serving.
