  • 3 lbs bone-in, skin-on chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/3 cup ketchup
  • 1/4 cup chicken broth
  • 2 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp water (for slurry)

Instructions

  1. Preheat your oven to 375°F (190°C). Arrange the chicken thighs skin-side up in a large baking dish.
  2. In a medium saucepan over medium heat, combine the pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, garlic, and sesame oil. Bring to a boil and then simmer for about 10 minutes.
  3. In a small bowl, whisk together cornstarch and water to form a slurry. Add this to the simmering sauce until it thickens.
  4. Pour the thickened sauce over the chicken thighs and bake uncovered for 45–60 minutes until the internal temperature reaches 165°F (74°C). Baste halfway through.
  5. Let the chicken rest for 5–10 minutes before serving.
