  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups chopped fresh spinach
  • 8 oz sliced mushrooms
  • Olive oil (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Microwave sliced mushrooms for 2-3 minutes; drain excess moisture.
  3. Lightly brush one side of each tortilla with olive oil and place oiled side down on a baking sheet.
