  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard. Grease and line a loaf tin with baking paper.
  2. In a mixing bowl, mash the bananas until smooth. Add canola oil, milk, both sugars, eggs, and vanilla extract; mix until well combined.
  3. Sift in flour, baking powder, and salt. Stir gently until just combined; some lumps are okay.
  4. Pour the batter into the prepared loaf tin and bake for 45–55 minutes until a skewer inserted comes out clean. Cool in the tin for about 10 minutes before transferring to a wire rack.
