  • 1 pound beef stew meat
  • ¾ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 medium yellow onion (chopped)
  • 3 ribs celery (chopped)
  • 3 carrots (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 4 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 6 cups low sodium beef broth (or chicken broth)
  • ¾ cup pearl barley
  • Chopped fresh parsley (for serving)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Add beef cubes, seasoning with salt and pepper; brown on all sides. Remove beef and set aside.
  3. Sauté onion, celery, carrots, and mushrooms in the same pot until softened.
  4. Stir in garlic, thyme, and tomato paste; cook until fragrant.
  5. Return beef to the pot with any juices.
  6. Pour in broth; add Worcestershire sauce and bay leaves. Bring to a simmer.
  7. Reduce heat; cover and cook for about 45 minutes.
  8. Add rinsed barley; cover and simmer for another 45–60 minutes until tender.
  9. Remove bay leaves; adjust seasoning as needed before serving with fresh parsley.
