Ingredients

Scale
  • 2 lbs beef chuck, cut into cubes
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili flakes (optional)
  • 1 tablespoon tomato paste
  • 1 cup beef broth or water

Instructions

  1. Gather all ingredients. Prepare the beef by cutting it into cubes, chop the onion finely, mince the garlic, and grate the ginger.
  2. In a large pot over medium heat, add oil. Once hot, sauté the onion until translucent. Add garlic and ginger; cook for about 2 minutes until fragrant.
  3. Stir in curry powder, turmeric, cumin, and optional chili flakes. Toast spices for about a minute.
  4. Increase heat to medium-high; add cubed beef and brown on all sides for about 5-7 minutes.
  5. Stir in tomato paste, then coconut milk and broth (or water). Bring to a gentle boil; reduce heat to low. Cover and simmer for about 2 hours until beef is tender.
  6. Taste and adjust seasoning as necessary before serving with fragrant rice and warm naan.
