  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 cup apple vinegar (optional)
  • 1 bay leaf
  • 1 tsp dried thyme

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sear the cubed beef until browned on all sides (about 5-7 minutes). Remove from pot.
  2. Add onions and garlic to the pot; sauté until translucent (3-4 minutes). Add carrots and potatoes.
  3. Return seared beef to the pot. Pour in beef broth and apple vinegar if using. Stir well. Add bay leaf and thyme.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until beef is fork-tender.
  5. Hollow out round loaves of bread for bowls while stew simmers.
  6. Remove bay leaf from stew before serving in bread bowls.
