  • 1 beef tenderloin roast (4 to 6 pounds)
  • 1 can plain breadcrumbs (10 oz, approximately 2 cups)
  • 2 tablespoons minced garlic
  • 1 large onion, chopped
  • 1 cup melted unsalted butter
  • 1 bunch fresh parsley, finely chopped (around 1 1/2 cups)
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the breadcrumbs, minced garlic, chopped onion, melted butter, and chopped parsley; mix well.
  3. Trim excess fat from the beef tenderloin and make a lengthwise cut down the center without cutting all the way through. Open it like a book for stuffing.
  4. Fill the opened tenderloin with the prepared stuffing, press evenly, and roll it back tightly. Season generously with salt and black pepper.
  5. Place in a roasting pan and insert a meat thermometer into the thickest part of the meat. Roast for about 50 minutes or until it reaches an internal temperature of 135°F (57°C) for medium-rare.
  6. Let rest for at least 10 minutes before slicing. Serve with your favorite sides.
