  • ½ cup red onion (chopped)
  • 8 oz black olives (drained and sliced)
  • 8 oz fresh mozzarella pearls
  • ½ cup parmesan cheese (shredded)
  • ½ cup parsley (chopped)
  • 1 ¼ cup olive oil
  • 3 tbsp lemon juice (freshly squeezed)
  • 1 ½ tbsp Italian seasoning
  • 2 tsp sugar
  • 3 tbsp red apple vinegar
  • 2 tsp garlic (minced)
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a medium bowl, whisk together olive oil, lemon juice, Italian seasoning, sugar, red apple vinegar, garlic, Dijon mustard, salt, and black pepper.
  3. In a large bowl, combine cooked pasta with turkey slices, cucumber, tomatoes, bell peppers, red onion, olives, mozzarella pearls, and parmesan cheese.
