  • 250 g caster sugar
  • 1 teaspoon vanilla extract
  • 4 medium eggs
  • 250 g self-raising flour

  • 200 g icing sugar
  • 2 tablespoons freshly squeezed orange juice

Instructions

  1. Preheat your oven to 180℃ (160℃ for fan ovens) and line an 8×10-inch baking tin with baking paper.
  2. In a mixing bowl, cream together the softened butter and caster sugar until light and fluffy. Stir in the vanilla extract.
  3. Gradually add the eggs one at a time, followed by the self-raising flour and milk. Mix until smooth, then fold in the orange zest.
  4. Pour the batter into the prepared tin and spread evenly. Bake for 25–30 minutes or until a toothpick comes out clean.
  5. Allow the cake to cool for about 10 minutes in the tin before transferring to a wire rack to cool completely before icing.
