  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 can (15 oz) tomato sauce
  • 4 cups low sodium vegetable broth
  • 1 cup dry ditalini pasta
  • 1 dried bay leaf
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, garlic, and carrots until soft (about 5–6 minutes).
  2. Stir in the cannellini beans, tomato sauce, bay leaf, basil, parsley, oregano, black pepper, and optional red pepper flakes.
  3. Pour in the vegetable broth and water; bring to a boil.
