  • 32 oz full-fat cream cheese, room temp
  • 1 cup granulated sugar
  • 4 large eggs, room temp
  • 1/3 cup heavy cream, room temp
  • 1/2 cup sour cream, room temp
  • 1 tbsp cornstarch
  • 2/3 cup homemade salted caramel sauce
  • 1 cup granulated sugar for caramel sauce
  • 5 tbsp unsalted butter, room temp and sliced
  • 1/2 cup heavy cream, warmed up
  • 1 tsp vanilla extract
  • 1 tsp salt

Instructions

  1. Prepare the caramel sauce by melting sugar until amber and mixing in butter, warm cream, vanilla, and salt.
  2. Make the cookie crust by crushing Biscoff cookies, combining them with melted butter, and pressing into a springform pan.
  3. Beat cream cheese until smooth; gradually mix in sugar, then eggs one at a time. Add sour cream, heavy cream, cornstarch, and caramel sauce.
  4. Pour filling over crust and bake at 350°F (175°C) for about 75 minutes until set but slightly jiggly.
  5. Allow to cool gradually before refrigerating for at least four hours or overnight.
