  • 5 oz mixed greens or baby spinach
  • 1 ripe avocado, thinly sliced
  • 1 cup fresh blackberries
  • 1 small red onion, thinly sliced
  • 1 cup crumbled feta
  • 1 cup toasted pecans or walnuts
  • Freshly cracked black pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a small bowl or jar, whisk together olive oil, lemon juice, honey (or maple syrup), Dijon mustard, salt, and pepper until well combined.
  2. In a large bowl or on a platter, layer mixed greens as the base.
  3. Top with sliced avocado and scatter fresh blackberries over it.
  4. Add red onion slices for crunch and sprinkle crumbled feta on top.
  5. Finish with toasted pecans or walnuts for added texture.
  6. Drizzle the vinaigrette over the salad just before serving and add freshly cracked black pepper to taste.
