  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dry basil leaves
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon avocado oil
  • 6 cups baby spinach
  • 1 pint blackberries
  • 2 kiwi, sliced
  • 1/4 cup sliced red onion
  • 1 avocado, sliced
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon dry basil leaves
  • Salt & pepper to taste
  • 2 tablespoons crumbled feta cheese (optional)
  • 2 tablespoons chopped walnuts (optional)

Instructions

  1. Season the chicken breasts with garlic powder, dry basil, black pepper, and salt.
  2. Heat avocado oil in a large skillet over medium-high heat. Cook the chicken for 4-6 minutes on each side until cooked through. Let it rest for 3 minutes before slicing.
  3. In a medium bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, dry basil, garlic powder, salt, and pepper until smooth.
  4. In a large mixing bowl, layer baby spinach, blackberries, kiwi slices, red onion, avocado slices, crumbled feta cheese (if desired), walnuts (optional), and sliced chicken.
  5. Drizzle or serve the dressing on the side.
