  • 230 g Caster Sugar
  • 10 g Blood Orange Zest
  • 170 g Whole Eggs
  • 115 g Heavy Cream
  • 185 g Cake Flour
  • 3 g Baking Powder
  • 3 g Fine Sea Salt
  • 60 g Neutral Oil (Vegetable or Groundnut)
  • 50 g Blood Orange Juice
  • 50 g Sugar (for Syrup)
  • Lemon Juice (to taste)
  • Blood Orange Juice (to taste)
  • 3 g Powdered Vegan Gelling Agent
  • 18 g Cold Water
  • 100 g Whole Milk
  • 135 g Dark Chocolate, Melted
  • 10 g Glucose
  • 200 g Heavy Cream (for optional cream)
  • 100 g Icing/Powdered Sugar (for glaze)

Instructions

  1. Preheat your oven to 160C/320F (non-fan assisted) and prepare a 2lb loaf tin by greasing and flouring it.
  2. In a mixing bowl, combine caster sugar and blood orange zest, massaging together for one minute before adding whole eggs. Whisk until the mixture thickens and lightens in color.
  3. Mix in the heavy cream until fully incorporated.
  4. Sift together the cake flour, baking powder, and sea salt before gently folding into the wet mixture along with neutral oil until smooth.
  5. Pour batter into the prepared loaf tin, then bake for 65-75 minutes or until a skewer comes out clean.
  6. Meanwhile, prepare the syrup by boiling sugar with lemon juice and blood orange juice until dissolved.
  7. Once baked, soak the warm cake with syrup, wrap it tightly, and chill overnight for best texture.
