  • 1/4 cup sour cream
  • 1 teaspoon vanilla bean paste
  • 2/3 cup frozen wild blueberries
  • Neutral frying oil (vegetable, canola, or avocado oil)
  • 3 cups powdered sugar
  • 1/4 cup + 23 tablespoons whole milk
  • 1/4 cup freeze-dried blueberry powder
  • 1 teaspoon blueberry emulsion or extract

Instructions

  1. Whisk together flour, baking powder, and salt in a medium bowl; set aside.
  2. In a large bowl, combine sugar, melted butter, buttermilk, egg, sour cream, and vanilla until smooth.
  3. Fold in dry ingredients until just combined; gently add frozen blueberries. Refrigerate for 30 minutes.
  4. Heat oil in a Dutch oven to 355°F (180°C).
  5. Prepare a wire rack over paper towels for draining.
  6. Scoop dough into hot oil; fry until golden brown (about 3 minutes per batch). Drain on the wire rack.
  7. For the glaze: mix powdered sugar, blueberry powder, milk, and extract until smooth. Microwave briefly to warm if needed.
  8. Glaze each donut while warm; tap off excess and enjoy!
