Blueberry Cinnamon Swirl Banana Bread is a delightful treat that harmoniously blends the sweetness of ripe bananas, the tartness of fresh blueberries, and the warm spice of cinnamon.   • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/3 cup plain Greek yogurt
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar (for swirl)
  • 1 1/2 tsp ground cinnamon (for swirl)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time.
  4. Stir in mashed bananas, Greek yogurt, and vanilla extract until smooth.
  5. Gradually add dry ingredients to wet mixture, mixing until just combined.
  6. In a small bowl, mix granulated sugar and ground cinnamon for the swirl.
  7. Pour half of the batter into the prepared loaf pan; sprinkle half of the cinnamon mixture and half of the blueberries on top.
  8. Add remaining batter over this layer and top with remaining cinnamon mixture and blueberries.
  9. Gently swirl through the batter with a knife to create patterns without fully mixing.
  10. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
