  • 1 Tablespoon Espresso Powder
  • 1½ Cups All-Purpose Flour
  • 1 Teaspoon Baking Soda
  • ¼ Teaspoon Kosher Salt
  • 4 Ripe Bananas
  • ½ Cup Granulated Sugar
  • 2 Tablespoons Brown Sugar
  • 1 Large Egg (Beaten)
  • 3 Ounces Semi-Sweet Chocolate

Instructions

  1. Melt 5 tablespoons of butter in a saucepan over low heat.
  2. Stir in 1 tablespoon of espresso powder until combined.
  3. In a mixing bowl, mash 4 ripe bananas until smooth.
  4. Combine the melted butter and espresso mixture with the mashed bananas.
  5. Mix in ½ cup granulated sugar and 2 tablespoons brown sugar until well incorporated.
  6. Add 1 large beaten egg to enrich the batter.
  7. Gradually mix in 1½ cups all-purpose flour, 1 teaspoon baking soda, and ¼ teaspoon kosher salt until just combined.
  8. Fold in 3 ounces of grated semi-sweet chocolate for added sweetness.
  9. Grease your loaf pan and pour in the batter.
  10. Bake at 375°F for about 40 minutes or until a toothpick comes out clean.
