  • 3 large ripe bananas, mashed (plus 1 halved for decoration)

  • 2 cups all-purpose flour
  • 1 cup dark brown sugar (plus more for sprinkling)
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8.5-by-4.5-inch loaf pan with cooking spray.
  2. In a light-colored sauté pan, melt the unsalted butter over medium heat until golden brown and fragrant. Let cool slightly.
  3. In one bowl, mix mashed bananas and eggs until combined. In another bowl, whisk together flour, dark brown sugar, baking powder, cinnamon, salt, and nutmeg.
  4. Combine the banana mixture into the dry ingredients and stir gently. Add the browned butter and mix until just incorporated.
  5. Pour the batter into the prepared loaf pan and place two banana halves cut-side up on top. Sprinkle with additional dark brown sugar.
