Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan over medium heat, melt the unsalted butter until it turns golden brown, stirring constantly. Let it cool slightly.
  3. In a mixing bowl, whisk together the browned butter, granulated sugar, brown sugar, egg yolk, vanilla extract, and pumpkin puree until smooth.

  5. Gradually stir the dry mixture into the wet mixture until just combined.
  6. Fold in the chocolate chips until evenly distributed.
  7. Scoop tablespoon-sized portions of dough onto a lined baking sheet with space between each cookie.
  8. Bake for about 12 minutes or until edges are lightly golden.
