  • 4 1/2 pounds chuck roast, cut into 2– to 3-inch chunks
  • 2 tablespoons crushed red pepper (adjust to taste)
  • 1 large onion, sliced
  • 1 bunch parsley, chopped
  • 6 to 8 cloves garlic, smashed
  • 2 bay leaves
  • 1/2 teaspoon allspice berries
  • 4 whole cloves
  • Kosher salt (optional)
  • 3 tablespoons unsalted butter
  • 2 cups red apple vinegar
  • 2 tablespoons tomato paste
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Marinate the beef by coating it with crushed red pepper in a bowl. Cover and refrigerate overnight.
  2. In a Dutch oven, layer the sliced onion, parsley, garlic, and bay leaves.
  3. Place allspice berries and cloves in cheesecloth or a tea ball and add them to the Dutch oven along with optional salt. Arrange the marinated beef on top and dot with butter.
  4. Combine apple vinegar, tomato paste, and cinnamon in a bowl; pour over the beef.
  5. Bring to a boil, then reduce heat to simmer gently for about 3 to 3.5 hours until the meat is tender. Remove the lid halfway through if you prefer a thicker sauce.
  6. Discard bay leaves and spice pouch before serving. Enjoy with boiled potatoes, roasted peppers, or greens.
