  • 1 large egg (for dredging)
  • 1 tbsp milk
  • ½ cup breadcrumbs
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Vegetable oil for frying
  • Chopped fresh parsley for garnish
  • Hot sauce drizzle for serving

Instructions

  1. Boil the eggs: Place eggs in cold water, bring to a boil, cover, and let sit for 10-12 minutes. Cool in an ice bath.
  2. Prepare the filling: Peel and halve the eggs; mash yolks and mix with mayonnaise, mustard, Cajun seasoning, lemon juice, salt, and pepper until smooth.
  3. Dredge the egg whites: Set up three bowls for flour, egg wash (beaten egg + milk), and breadcrumbs mixed with paprika and garlic powder. Coat each egg white half in flour, then dip in egg wash and coat with breadcrumbs.
  4. Fry the egg whites: Heat vegetable oil to 350°F (175°C) and fry each coated egg white until golden brown (1-2 minutes per side). Drain on paper towels.
  5. Assemble: Pipe or spoon yolk filling into fried whites and garnish as desired.
