Caprese Pasta Salad is a vibrant and refreshing dish that reimagines the classic Caprese salad as a hearty pasta delight. Perfect for summer gatherings, picnics, or as a make-ahead meal, this pasta salad combines al dente farfalle with juicy cherry tomatoes, creamy mozzarella, and fragrant basil. Tossed in a simple vinaigrette made from olive oil, balsamic vinegar, and lemon juice, every bite bursts with flavor.

  • 8 oz farfalle (bow tie pasta)
  • 1 cup cherry tomatoes (halved)
  • 5 strips of thinly sliced turkey
  • 1 cup fresh mozzarella balls (halved)
  • 1/2 cup fresh basil leaves (thinly sliced)
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove (grated)
  • 1/4 tsp red pepper flakes
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F. Arrange turkey slices on a foil baking sheet and bake for 10-12 minutes until crispy.
  2. Once cooked, let turkey cool before dicing into preferred sizes.
  3. Boil water in a large pot and cook farfalle according to package instructions. Drain and rinse under cold water.
  4. In a bowl, combine olive oil, balsamic vinegar, lemon juice, grated garlic, red pepper flakes, salt, and black pepper to create the vinaigrette.
  5. In a large mixing bowl, combine cooked pasta with vinaigrette, diced turkey slices, cherry tomatoes, mozzarella balls, and basil. Toss thoroughly.
