  • 1 large whole garlic head
  • 1 ½ tablespoons olive oil
  • 4 large sweet onions (about 9 cups thinly sliced)
  • 2 medium leeks (about 2 ½ cups sliced)
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1/3 cup dry apple vinegar
  • 4 cups vegetable broth
  • 2 cups milk

Instructions

  1. Preheat oven to 350°F. Wrap garlic head in foil with olive oil and roast for one hour.
  2. In a large pot, heat remaining olive oil over medium heat. Cook sliced onions and leeks uncovered for about 30 minutes, stirring often.
  3. Add salt and thyme; continue cooking uncovered for another 30 minutes until golden brown.
  4. Stir in flour, then add apple vinegar and vegetable broth. Bring to a boil and simmer for about 30 minutes.
  5. Blend roasted garlic with the onion mixture until smooth.
  6. Return the blended mixture to the pot, add milk, and gently simmer for about 8 minutes before serving.
