- 1 large whole garlic head
- 1 ½ tablespoons olive oil
- 4 large sweet onions (about 9 cups thinly sliced)
- 2 medium leeks (about 2 ½ cups sliced)
- 1 teaspoon salt
- 1 teaspoon dried thyme
- 2 tablespoons all-purpose flour
- 1/3 cup dry apple vinegar
- 4 cups vegetable broth
- 2 cups milk
- Preheat oven to 350°F. Wrap garlic head in foil with olive oil and roast for one hour.
- In a large pot, heat remaining olive oil over medium heat. Cook sliced onions and leeks uncovered for about 30 minutes, stirring often.
- Add salt and thyme; continue cooking uncovered for another 30 minutes until golden brown.
- Stir in flour, then add apple vinegar and vegetable broth. Bring to a boil and simmer for about 30 minutes.
- Blend roasted garlic with the onion mixture until smooth.
- Return the blended mixture to the pot, add milk, and gently simmer for about 8 minutes before serving.
