  • 2 cans (400g each) white beans, drained
  • 1 tablespoon balsamic vinegar
  • 2 sprigs rosemary, diced
  • 3 tablespoons lighter creme fraiche
  • Salt and black pepper to taste
  • Extra virgin olive oil (EVOO)
  • 20g Pecorino cheese
  • 2 tablespoons water

  2. Add balsamic vinegar and cook for another 10 minutes.
  3. Mix in minced garlic and diced rosemary; cook for an additional minute.
  4. Incorporate drained white beans, crushing some against the pot's side for creaminess.
  5. Stir in lighter creme fraiche and water until thickened.
  6. Season with grated Pecorino cheese, salt, and pepper to taste.
  7. Serve hot on toasted sourdough or alongside mashed potatoes.
