  • 12 cups cubed French bread
  • 3 pears (peeled and diced)
  • 5 eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 2 tsp ground cardamom
  • ½ cup sugar
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 10 cardamom pods
  • 1 ½ cups sugar (for syrup)
  • ¼ cup water
  • ¼ cup orange juice
  • zest of 1 orange
  • ½ tsp kosher salt
  • pinch ground cardamom
  • 2 tbsp raw turbinado sugar (optional)
  • ¾ cup heavy whipping cream (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine cubed French bread, diced pears, brown sugar, and 1 tsp cardamom. Toss to coat.
  3. In another bowl, whisk together eggs, milk, cream, sugar, and salt until smooth. Pour over the bread mixture and let soak for 30 minutes.
  4. Transfer to a greased baking dish; sprinkle raw turbinado sugar on top if desired. Bake for about 60 minutes until golden and set.
  5. While baking, prepare cardamom syrup by simmering sugar, water, butter, orange juice, zest, salt, and cardamom pods in a saucepan until thickened.
  6. Serve warm drizzled with cardamom syrup.
