  • 1 (10 oz) can Rotel tomatoes
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese (any variety)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion; cook until the beef is browned and onions are translucent, about 8-10 minutes. Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for an additional 30 seconds until fragrant.
  3. Mix in beef broth, Rotel tomatoes, and tomato paste. Bring to a boil.
  4. Once boiling, stir in rice; cover and simmer on low heat for about 15 minutes or until the rice absorbs most of the liquid.
  5. Sprinkle cheese on top and cook uncovered for an additional 5 minutes until melted.
