  • 4 cups shredded cooked chicken
  • Fresh thyme for seasoning
  • Black pepper for seasoning
  • 2 cups all-purpose flour (for dumplings)
  • 1 tablespoon, plus 1 teaspoon baking powder (for dumplings)
  • 1 teaspoon freshly cracked black pepper (for dumplings)
  • 1 teaspoon salt (for dumplings)
  • 1 tablespoon fresh thyme (for dumplings)
  • 3/4 cup whole milk (for dumplings)
  • 4 tablespoons melted butter (for dumplings)

Instructions

  1. In a large pot, melt butter over medium-high heat. Add onion, carrots, and celery; cook for 5 minutes. Add garlic and cook for an additional minute.
  2. Stir in flour to create a roux; cook for another minute. Gradually add evaporated milk and chicken stock while stirring.
  3. If using raw chicken, add it along with an extra cup of broth; simmer for about 20 minutes until cooked through. Shred the chicken before returning it to the pot.
  4. For pre-cooked chicken, bring the mixture to a boil then add shredded chicken along with thyme and black pepper; let it simmer uncovered.
  5. In a bowl, mix dumpling ingredients until just combined. Drop spoonfuls into the simmering soup; cover tightly and steam for 15-20 minutes until fluffy.
