  • 4 strips Turkey Bacon, chopped
  • 1 small yellow onion, diced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups diced Yukon Gold potatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and pepper to taste
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn, fresh, frozen, or canned
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. In a large pot, cook chopped turkey bacon until crispy; set aside.
  2. In the same pot, sauté diced onion, chopped celery, and minced garlic until soft.
  3. Stir in all-purpose flour and gradually add chicken broth while mixing until smooth.
  4. Add diced Yukon Gold potatoes, dried thyme, parsley, salt, and pepper; let simmer until potatoes are tender.
  5. Mix in cooked shredded chicken and corn; heat for 5–7 minutes.
  6. Reduce heat; stir in half & half and sour cream until blended, then simmer lightly.
