  • 1 yellow onion
  • 3 cups grilled corn kernels
  • 34 cups cooked rice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons smoked paprika
  • 2 teaspoons chili powder or Tajin
  • 2 teaspoons cumin
  • Kosher salt and black pepper
  • 3 cloves garlic, chopped
  • 1/3 cup extra virgin olive oil (for vinaigrette)
  • 1/3 cup salsa verde
  • 1/4 cup lime juice
  • 2 teaspoons spicy honey
  • 1/3 cup cilantro, chopped

Instructions

  1. Heat olive oil in a large skillet. Add sliced chicken with spices and cook on high heat for about 8-10 minutes until seared and cooked through.
  2. In the same skillet, sauté sliced onions for 5 minutes, then add bell peppers and cook until tender.
  3. Combine the cooked chicken with vegetables in the skillet.
  4. For the vinaigrette, mix all ingredients in a glass jar and shake well.
