  • 3 bell peppers (seeded and thinly sliced)
  • 1 medium yellow onion (thinly sliced)
  • 1 ¼ lb boneless chicken breasts (sliced into thin strips)
  • 2 tablespoons olive oil (divided)
  • 3 cloves garlic (minced)
  • Juice from one lime (about 2 tablespoons)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • 8 flour or corn tortillas

Instructions

  1. In a small bowl, combine all seasoning ingredients and set aside.
  2. Heat 1 tablespoon of olive oil in a cast iron pan over medium heat. Add sliced bell peppers and onions; sauté for 5–7 minutes until softened.
  3. Stir in minced garlic and half of the seasoning mixture; cook for another 2–3 minutes.
  4. Remove veggies from the pan and add remaining oil along with chicken strips and remaining seasoning. Squeeze lime juice over the top and cook for about 5–6 minutes until chicken is fully cooked.
  5. Return sautéed vegetables to the skillet with chicken; stir well and heat through for an additional 1–2 minutes.
  6. Serve in warm tortillas with desired toppings.
