  • 1/4 cup cashew butter (or almond/sunflower seed butter)
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup milk chocolate chips
  • 1 tsp coconut oil

Instructions

  1. In a medium bowl, whisk together almond flour, protein powder, and salt.
  2. In another bowl, mix cashew butter, milk, honey/maple syrup, and vanilla until smooth.
  3. Combine wet and dry mixtures until well blended.
  4. Fold in mini chocolate chips.
  5. Adjust consistency with additional milk if needed.
  6. Roll into 1-inch balls and place on parchment paper.
  7. Chill for at least 30 minutes to firm up.
  8. Melt milk chocolate chips with coconut oil in the microwave.
  9. Dip each ball in melted chocolate and sprinkle with extra chocolate chips.
  10. Refrigerate for an additional 15-20 minutes to set.
