  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 ounces chocolate almond bark
  • 1 ½ cups white chocolate chips
  • ½ of 14 oz can sweetened condensed milk
  • ½ teaspoon mint extract
  • Green food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together room temperature butter and white sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  3. Combine dry ingredients: mix cocoa powder, flour, baking soda, baking powder, and salt into the wet mixture until just combined.
  4. Roll dough into 1-inch balls and place them on the prepared baking sheet. Press your thumb into each ball to create an indentation.
  5. Bake for 12 minutes; if thumbprints vanish during baking, press down again immediately after removing from the oven. Cool on the sheet for 2 minutes before transferring to a wire rack.
  6. For the filling, melt white chocolate chips with sweetened condensed milk in a saucepan over medium heat until smooth. Stir in mint extract and green food coloring.
  7. Fill each cookie's indentation with fudge filling and drizzle melted chocolate almond bark over the top.
