  • 6 tablespoons unsalted butter
  • 3 (8 ounce) packages cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ⅓ cup special occasion -colored sprinkles

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Combine crushed sugar cookies and melted butter; press into the bottom of the pan. Bake for 8-10 minutes until golden; cool.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream, then fold in sprinkles.
  4. Pour mixture over cooled crust and bake for 50-60 minutes until set around edges but slightly jiggly in center. Turn off oven, let cool inside for 1 hour with door ajar.
  5. Chill in the refrigerator for at least 4 hours or overnight before serving.
