  • 2 large eggs
  • 3/4 cup low-fat buttermilk
  • 2 tsp vanilla extract
  • 2 cups grated carrots
  • 16 oz full fat cream cheese, cool room temperature
  • 1/2 cup unsalted butter, cool room temperature
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 5 cups powdered sugar, sifted

Instructions

  1. Preheat oven to 350°F and grease two 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In another bowl, combine melted coconut oil, sugar, eggs, buttermilk, and vanilla until smooth.
  4. Pour wet ingredients into dry mixture and gently fold in grated carrots.
  5. Divide batter evenly between prepared pans and bake for 26-28 minutes until a toothpick comes out clean.
  6. Cool completely before frosting with cream cheese mixture.
