  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp red apple vinegar
  • 1 tbsp Dijon Mustard
  • 1 tbsp Grainy Mustard
  • 1 tsp salt
  • ¼ tsp freshly ground black pepper
  • 4 tbsp fresh dill, chopped
  • 1 shallot, peeled and diced
  • 56 cornichons (or dill pickles), diced
  • 1 tbsp cornichon juice

Instructions

  1. Cook the Potatoes: Slice potatoes and place them in a large pot covered with water. Add salt and bring to a boil. Simmer for about 15 minutes until tender, then drain and rinse under cold water.
  2. Prepare the Vinaigrette: In a mixing bowl, combine olive oil, vinegar, mustard, salt, and pepper. Whisk until emulsified. Stir in dill, shallots, cornichons, and cornichon juice.
