  • 1 ½ lbs lean ground beef
  • 1 cup diced onion
  • ¾ cup bread crumbs
  • â…“ cup broth (or milk)
  • 2 eggs
  • 1 tsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with aluminum foil.
  2. In a large mixing bowl, combine the ground beef, diced onion, bread crumbs, broth, eggs, garlic powder, onion powder, salt, pepper, and tomato paste. Mix until well blended.
  3. Shape the mixture into a loaf or pack it into a greased loaf pan. Transfer to the prepared baking sheet.
  4. Bake uncovered for 40 minutes.
  5. Mix ketchup and white vinegar in a small bowl; spread over the meatloaf after 40 minutes of baking. Return to the oven for an additional 10 minutes.
  6. Let rest for 10 minutes before slicing and serving.
