  • 1 medium yellow onion (diced)
  • 4 medium carrots (finely diced)
  • 4 medium celery ribs (finely diced)
  • 5 teaspoons minced garlic
  • 4 cups beef broth
  • 2 (15 ounce) cans diced tomatoes
  • 1 (15 ounce) can red kidney beans (drained and rinsed)
  • 1 (15 ounce) can cannellini beans (drained and rinsed)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 1/2 cups ditalini pasta

Instructions

  1. In a large pot over medium-high heat, cook the ground turkey until browned, about 5 minutes. Drain excess grease.
  2. Add the diced onion, carrots, and celery to the pot. Cook until softened, around 7 to 10 minutes. Stir in the minced garlic during the last minute of cooking.
  3. Pour in the beef broth and add the diced tomatoes along with the drained beans. Season with salt, pepper, and thyme. Bring to a boil.
  4. Add the ditalini pasta to the pot. Reduce heat to medium and simmer until pasta is al dente, about 7 minutes.
  5. Serve hot, garnished with fresh basil if desired.
